This is a great side-dish. It can also be used as a base for a paella. Just add in meat, fish or your favourite sea food and you get a great and complete meal. The recipe came from a Romanian cooking magazine. You can use any kind of seasoning you prefer; i personally add a lot of garlic, because i think it goes great with the dish. Ingredients:
1 cup rice (preferably basmati) |
3 cups water |
1/2 cup chicken stock |
3 -4 garlic cloves |
3 -4 tomatoes |
salt |
pepper |
red paprika |
4 tablespoons olive oil |
Directions:
1. Boil the rice for 8 minutes in water mixed with salt and a little oil. 2. After cooked, take the rice away from heat and let it rest for a while. It should absorb all the remaining water from the pan. 3. Dice the tomatoes and finely chop 3 garlic cloves. 4. In a pan (preferably a wok) pour the olive oil and add in the tomatoes and the chopped garlic. Cook for 1-2 minutes, until the liquid turns a caramel colour. 5. Add the rice and the seasonings. Stir in for about 1 minute. 6. Add the chicken stock. Cook at medium heat for 15 minutes. 7. Add another garlic clove. 8. Move to low heat and cook until all the chicken stock is absorbed (make sure you stir a lot, or else the rice could stick to the pan). |
