I was given this recipe from a coworker. The V-8 juice is what makes this so good.
Ingredients:
1 lb ground beef
diced onion
diced bell pepper
1 (16 ounce) can diced tomatoes
1 (46 ounce) can v8 vegetable juice
1 -2 cup rice
Directions:
1. Brown ground beef with onions and peppers.
2. add tomatoes and V-8.
3. let it simmer for 10 minutes then add rice.
