This is my mom's recipe and it is to die for! Ingredients:
3/4 white rice |
1/2 lb bacon |
bacon fat |
1/2 cup green bell pepper |
2 onions, chopped |
28 ounces hunts whole tomatoes |
water |
paprika |
salt and pepper |
Directions:
1. Fry bacon. Take bacon out of pan and put aside. Fry onions in bacon fat. Take onions out of pan leaving as much fat in pan as possible. brown rice in bacon fat. Add 3 cups of water to browned rice and bring to boil. Boil 6 minutes or until rice is slightly tender. Rice will finish cooking in oven. Drain rice. Add tomatoes (breakup with hands), bacon (broken into pieces), onion and green peper to rice. Add enough paprika to change color of rice or desired amount. Add salt and pepper to taste. Combine all ingredients well and place in oven at 375 for 45 minutes. |
