                    Given to Mum by a friend who grew up in Spain Ingredients: 
                    
                        
                                                1 cup rice, uncooked  |  
                                                1 medium onion, diced  |  
                                                1 garlic clove, minced  |  
                                                1 (14 1/2 ounce) can diced tomatoes  |  
                                                1 1/2 cups chicken broth  |  
                                                1 1/2 cups water  |  
                                                salt, to taste  |  
                                                pepper, to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Saute rice, onion and garlic until rice is slightly brown and onion is softened. 2. Add remaining ingredients and bring to a boil. 3. Cover and turn down heat to medium-high for about 25-30 minutes until rice is soft and liquid is gone.                              |
