Spicey Spanish Rice Ingredients:
1 cup long grain rice |
1 tablespoon lard or 1 tablespoon vegetable oil |
1 small yellow onion, finely diced |
2 -3 garlic cloves, finely diced |
1 (8 ounce) can spicy tomato sauce |
1 3/4 cups chicken broth or 1 3/4 cups stock |
1 pinch cayenne pepper |
1/2 teaspoon cumin |
salt and pepper |
1 serrano peppers (optional) or 1 jalapeno pepper, finely diced, for heat (optional) |
Directions:
1. Remove lids from can and set aside. 2. Heat lard or oil in a saucepan on medium high. 3. Add rice, stirring constantly. 4. When rice is brown, add onion, garlic and diced pepper. 5. Continue to stir. 6. Add Chicken Broth, Tomato Sauce and spices. 7. Stir well. 8. Bring to a full boil, cover and reduce heat to medium low. 9. Let simmer until rice is tender and most of the broth has evaporated (20-30 minutes). 10. If your rice is still a little hard add a touch of water. 11. Remove rice from heat and leave covered until ready to serve. |
