This is a very nice potato recipe that I have been making for several years now. I'm not sure where I got the recipe, but believe it came from a neighborhood cookout. Enjoy Ingredients:
2-1/2 pounds potatoes sliced into bite size pieces |
8 ounces lean bacon |
10 ounces frozen diced sweet peppers |
15 ounce can crushed tomatoes |
1/2 cup chopped green olives with pimiento |
1/4 teaspoon garlic powder |
1/2 teaspoon onion powder |
2 tablespoons chili powder |
2 cups water |
2 tablespoons chopped capers |
additional capers for garnish |
Directions:
1. In large heavy skillet cook bacon until well done and crisp then remove from skillet. 2. Drain on paper towel then crumble and reserve. 3. Pour off drippings and add peppers to skillet then cook 5 minutes. 4. Add tomatoes, olives, powders, water and potatoes. 5. Bring to boiling and cook uncovered stirring occasionally for 20 minutes. 6. Stir in capers then allow to stand 5 minutes and stir in crumbled bacon. 7. Add additional capers if desired. |
