Spanish Potato Kale Chorizo Tortilla |

Like a frittata, loaded with kale Ingredients:
8 large eggs |
2 cups cooked kale |
1 cup diced potato, cooked |
1/2 yellow pepper, diced |
2 links spanish chorizo |
1/2 tbs. olive oil |
Directions:
1. Make sure all the veggies are cooked. Stir them into the beaten eggs. Salt and pepper to taste. Oil pan, pour in mixture, cook 5 min on med. heat, then bake in oven 375 for 10 min until cooked through. Could easily skip the chorizo, or reduce the amount - most of the calories are from the chorizo. |
