SPANISH ONION AND ZUCCHINI CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996. Ingredients:
1 large spanish onion |
2 slices tomatoes |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
2 small zucchini |
1 cup croutons |
1 cup shredded pepper jack cheese |
Directions:
1. Peel and thinly slice onion and layer in casserole with zucchini, tomatoes and croutons. 2. Sprinkle each layer with salt and pepper. 3. Cover and bake at 350 for 1 hour uncovered then sprinkle with cheese and bake until melted. |
