Tomato and Mushroom Sauce for Omelets Ingredients:
2 tablespoons olive oil |
1/2 cup scallions - finely chopped |
1/2 cup green pepper - finely chopped |
1 clove garlic - finely chopped |
15 ounces diced tomatoes |
8 ounces mushrooms - sliced |
1/2 teaspoon dried oregano |
1 salt and pepper to taste |
4 ounces green peas |
Directions:
1. Saute green pepper, green onions, and garlic until tender 2. Add tomatoes and seasonings 3. Add mushrooms and simmer to reduce liquids to a thick sauce 4. Add peas |
