Put some Pizzazz inot winter meals and serve Spanish meatballs using low-fat nutritious ground turkey. Serve them over basmati rice (brown rice if you want an extra hit of goodness!!) Ingredients:
1 1/2 lbs . ground turkey |
1 teaspoon salt |
2 onions, finely chopped, divided |
2 garlic cloves, minced, divided |
1 tablespoon paprika |
1 cup roasted red pepper, chopped, divided |
1/2 cup breadcrumbs |
2 tablespoons parsley, chopped |
1 egg |
1 tablespoon olive oil |
1 (454 g) can diced tomatoes |
4 cups tomato juice |
2 tablespoons granulated sugar |
1 teaspoon hot sauce |
1 teaspoon worcestershire sauce |
2 cups basmati rice |
6 saffron threads |
Directions:
1. In a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg. Mix turkey until well combined and set aside. 2. In a large pot on medium, heat oil and sauté remaining onions until transparent. Add all remaining ingredients and bring to a simmer. 3. With slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size. Gently drop meatballs into simmering sauce until all the turkey mixture is finished. Cover pot and let simmer on low for 1 hour or until meatballs ore cooked through. 4. TO MAKE RICE:. 5. Follow package directions, adding saffron threads to water. Try using vegetable or chicken stock instead of water for more savory rice. |
