Want to use up that old bread rather than throwing it out? Try this recipe, the older the bread the better. Due to an egg allergy I cannot try this, but is smelt fabulous. Ingredients:
8 -12 slices of crusty baguette or 8 -12 slices ciabatta, style bread. at least a day old |
2 cups milk |
1/3 cup sugar |
1/2 teaspoon lemon zest |
1/2 teaspoon orange zest |
2 tablespoons orange juice |
1 tablespoon vanilla |
1 teaspoon cinnamon |
1/2 teaspoon ground nutmeg |
2 eggs |
1/2 cup butter, for frying |
1/4 cup icing sugar |
Directions:
1. If you are using ciabatta bread - 8 slices is the maximum. 2. In a saucepan, place the milk,sugar, zests, juices, vanilla and spices. Simmer for 5-7 minutes (it will start to smell amazing!). 3. Cool the mix for 5 minutes. 4. Add the bread all at once and leave it there to soak up all that goodness, allow a good 20 minutes. 5. Beat the eggs in a seperate bowl and in batches, carefully coat the bread. 6. In a large heavy based fry pan, add the butter (start with 2 tablespoons) and sizzle over a medium heat until fragrant. 7. Add 6 - 8 slices of bread (depending on the size of your pan - don't over crowd it) and cook for 3-4 minutes each side. Add more butter for each batch you make. 8. Repeat until all the bread has been fried. 9. Place the bread on a plate and sprinkle with icing sugar and serve warm. |
