A nicely scented salad makes an incredibly refreshing accompaniment for any fish dish. Ingredients:
2 seedless cucumbers, peeled and thinly sliced or grated |
juice of 1 orange |
juice of 1/2 lemon |
1 - 2 teaspoons orange flower water (check italian, or mediterranean specialty markets... or at: www.thespicehouse.com) |
3 - 4 tbsp caster (superfine) sugar |
1/2 tsp ground cinnamon |
kosher or ground sea salt |
Directions:
1. Place cucumber in a colander over a bowl and sprinkle with salt. Leave to drain for 10 minutes. 2. Gently squeeze out the excess liquid, then place the cucumbers in a bowl. 3. Dressing: 4. Combine the lemon and orange juice, orange flower water, and sugar. 5. Pour over the cucumbers and toss well to mix. 6. Sprinkle with cinnamon, cover and chill for one hour. |
