Spanish Chicken With Bell Peppers

uses chicken thighs i think this could go into crock pot pretty easily
Ingredients:
1 lb chicken thigh
2 tablespoons olive oil
2 onions, sliced
2 bell peppers, sliced
1/8 cup black olives, sliced
1 bay leaf
1 (15 ounce) can tomatoes
1 cup water
1/4 cup parsley, minced
3 garlic cloves
3 slices bacon, chopped
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
Directions:
1. heat oil season chicken with salt pepper and shake of paprika
2. brown in oil
3. take out add bacon onions and bell peppers
4. brown add garlic and paprika
5. add tomatoes
6. add parsley and bay leaf add chicken back
7. add water simmer 30 minutes covered checking for burning
8. add olives uncover and cook until most liquid evaporated watch out can burn easily here.
