In 'The Everything Soup, Stew, & Chili Cookbook' Ingredients:
1 tablespoon olive oil |
1 shallot, minced |
8 cups chicken broth |
1 zucchini, halved lengthwise and sliced |
4 ounces mushrooms, sliced |
2 tomatoes, diced |
1 cup ham, finely diced |
1 1/2 cups cooked chicken, diced |
thyme, a pinch |
salt |
pepper |
Directions:
1. In a soup pot, heat olive oil over med-high heat. 2. Add shallot; saute 3 minutes. 3. Add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil. 4. Decrease heat to medium; simmer 15 minutes. 5. Stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes. 6. Remove from heat and let stand briefly before serving. |
