A good dish to make in advance. Ingredients:
8 chicken thighs (skin and bone on or in) |
3 onions, thinly sliced |
2 teaspoons paprika |
1 lemon, juice and zest |
2 ounces parsley, roughly chopped |
2/3 cup chicken broth |
1 tablespoon olive oil |
1 pinch salt and pepper |
Directions:
1. Heat the oven to 375°F. 2. Put all the ingredients in a large wide ovenproof dish. 3. Mix everything together with your hands and season with salt and pepper. 4. Bake for 45 mins, stirring the onid after 20 mins, until the chicken is golden and the onions tender. 5. Serve with rice. |
