These cheese filled pastries are not only beautiful, but easy to make and delicious Ingredients:
spanikopitas |
1 package (17 1/4 oz.) frozen puff pastry sheets (2 sheets) |
3 eggs |
1 tbs. water |
1/2 cup crumbled feta cheese |
1 package (about 10 oz.) frozen chopped spinach, thawed and well drained |
1 medium onion, finely chopped |
2 tbs. chopped fresh parsley |
Directions:
1. Thaw pastry sheets at room temperature 30 minutes. Preheat oven to 400. Mix 1 egg and water and set a side. Mix remaining 2 eggs with cheese, spinach, onion and parsley and set a side. 2. Unfold pastry sheets on lightly floured surface. Roll each sheet into a 12-inch square and cut each into 13 (3-inch) squares. Place 1 TBS. spinach mixture in center of each square, Brush edges of squares with egg mixture. Fold squares to form triangles. Press edges to seal. Place 2 inches apart on a baking sheet. Brush with egg mixture. 3. Bake 20 minutes or until golden. Serve warm or at room temperature. Makes 32 appetizers |
