Greek rice and spinach from Oxo on Ingredients:
1 onion, peeled, diced |
3 bunches spinach, washed 3 times |
2 tablespoons olive oil |
1 1/2 cups rice |
1 tablespoon tomato paste |
3 cups water, boiling |
1 chicken stock cube |
salt & pepper |
Directions:
1. Chop spinach roughly. 2. Heat oil and saute onion for 10 minutes Add rice and spinach and tomato paste. Saute 5 minutes. 3. Add water and stock cube and seasoning, mix well. 4. Bring to boil and turn down heat and cook for 20mins or until rice is soft. 5. Serve. |
