Ingredients:
1/2 cup chopped onion
1 tablespoon extra virgin olive oil
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1/2 cup feta cheese
1/2 teaspoon pepper
1 thawed puff pastry sheet
Directions:
1. Cook 1/2 cup chopped onion in 1 tablespoon extra-virgin olive oil until soft.
2. Stir in one 10-ounce box frozen chopped spinach, thawed and squeezed dry, 1/2 cup feta cheese and 1/2 teaspoon pepper; puree in a food processor.
3. Cut twelve 2 1/2-inch rounds from 1 thawed puff pastry sheet; prick each with a fork.
4. Press into a mini-muffin pan, then fill with the spinach mixture.
5. Bake in a 375° oven until golden, about 20 minutes.
