Spaghetti with Herbed Cheese Ingredients:
1 cup ricotta cheese |
4 cloves garlic, crushed |
1/2 cup walnuts, ground |
1/4 cup basil, fresh minced |
2 tbsp parsley, fresh minced |
1 tbsp parmesan cheese, grated |
1 tsp salt |
3/4 pound whole wheat spaghetti |
1 cup peas |
Directions:
1. in a medium bowl, blend together the ricotta cheese & garlic 2. grind the walnuts 3. add the walnuts, herbs, cheese & salt to ricotta & stir to combine 4. bring a large kettle of water to a boil & cook the pasta until firm-tender 5. at the same time cook the peas in a small amount of water or steam until tender 6. drain the pasta & peas & toss in serving bowl with enough herbed cheese to thoroughly coat |
