Spaghetti with cherry tomatoes for 1! |

A quick and healthy lunch or dinner for 1. Ingredients:
125 g spaghetti (i use wholemeal) |
1 tablespoon olive oil |
1 clove garlic, crushed |
2 small zucchini, grated |
125 g cherry tomatoes, halved |
chopped fresh parsley, to serve (optional) |
Directions:
1. Cook pasta until al dente, following packet directions. 2. Drain. 3. Heat the oil in a small non-stick frying pan over medium heat. 4. Add garlic, zucchini and tomatoes. 5. Cook, stirring, for about 3 minutes. 6. Stir through the hot cooked pasta. 7. Season to taste with salt and pepper and serve sprinkled with parsley. |
