My husband and I really liked this and it was really easy to prepare. You can use eggs instead of substitute or regular cottage cheese,I used what the recipe called for because it's lower in fat & cholesterol. Ingredients:
6 ounces spaghetti |
1/4 cup egg substitute |
1/3 cup parmesan cheese |
1 tablespoon margarine |
1/4 cup egg substitute |
1 cup fat-free cottage cheese |
1/8 teaspoon pepper |
1 lb lean ground turkey |
1 cup fresh mushrooms, sliced |
1 cup onion, chopped |
1/2 cup green pepper, chopped |
16 ounces spaghetti sauce |
1/8 teaspoon italian seasoning |
Directions:
1. Cook spaghetti according to package directions. 2. Drain spaghetti and rinse with cold water and drain good. 3. For spaghetti crust,in small bowl combine 1/4 cup egg substitute,cottage cheese & margarine (I used smart balance lite) & parmesan cheese,add the spaghetti and toss to coat. 4. Put spaghetti mixture in 9x13 pan,greased. 5. In small bowl combine 1/4 cup egg substitute,cottage cheese & pepper. 6. spread over spaghetti crust and set aside. 7. In large skillet cook turkey, mushrooms, onion, green pepper & Italian seasoning until meat is browned and vegetables are tender; drain fat and stir in spaghetti sauce. 8. Cook until heated through. 9. Spoon meat mixture over cottage cheese. 10. Bake at 350°F for 45 minutes and bubbly. |
