Spaghetti Squash With Kale |

Spaghetti squash looks a little bit like pasta, when cooked. I really like it's subtle flavor and low calorie count. To up it a little bit, flavor- and presentationwise , I love to add cooked dark greens like chard or kale. Ingredients:
1 med spaghetti squash, halved and seeds and gooey stuff removed ( don't peel ) |
cooking spray |
for the kale |
1 tb olive oil |
1 bunch kale, ribs removed, chopped |
1/2 med onion |
1 glove garlic |
1/2 c chickenbroth or water |
s+p |
for the squash |
2 tb olive oil, fruity |
1/2 c parmesan, grated |
Directions:
1. Heat oven to 400 F. Spray cooking pan with oil, set squash halves with the cut side down on the pan and roast for 45 min. Take out the oven, let cool. Take a fork and scrape out the flesh, it will come out easy, falling into little strands exactly looking like pasta. Mix with olive oil and pamesan. 2. In a wide pan, heat oil and saute onion and garlic, until soft. Season with salt, add kale and let sweat a little bit. Add the broth and cook kale, until tender, for ca. 8 min. 3. Add the squash, mix well and reheat, stirring from time to time, for 5 min. or so. Adjust seasoning, put into warm bowl and serve at once. |
