This is an interesting spin on latkes. Instead of potatoes I use spaghetti squash. Ingredients:
4 cups spaghetti squash |
1 large onion, chopped |
1 1/2 tsp. salt |
2 tbsp. flour |
2 eggs |
black pepper to taste |
canola oil for frying |
Directions:
1. Prepare Spaghetti Squash by cutting it in half length wise, scooping out seeds, placing it cut side down on a cookie sheet and baking in oven at 350F for about 25 minutes. Take out of oven and allow to cool down. Once cooled, use a fork to scrap out from skin. 2. In a mixing bowl, add all ingredients except for the oil. Mix well. 3. In a frying pan, add enough oil to cover bottom of pan with some excess (about an 1/4 inch deep). 4. Once oil is ready for frying, spoon out about a quarter cup of the mixture into the frying pan. 5. Fry for about two minutes, then turn the latke to the other side and allow to cook for another two minutes. 6. Latke should be golden brown on both sides. 7. Drain excess oil on paper towel then serve. 8. They can be served with a marinara sauce, sour cream or plain yogurt. |
