Spaghetti Squash Egg Salad |

I love spaghetti squash and wanted a different recipe for a salad. Another don't knock it till you try it recipe . My vegetarian girlfiends gave the thumbs up when I served it! Ingredients:
1 large spaghetti sqaush |
3 - 4 large eggs hard boiled |
1 tbs sweet chopped onion or to taste |
2 tbs chopped celery or to taste |
2 tbs chopped fresh parsley or to taste |
mayonaisse to bind or veganaisse |
salt and pepper to taste- or spike seasoning |
6 low carb wraps ( we use tomato basil , spinach or plain ), low carbs wraps are not as large as the regular sized wraps |
Directions:
1. Cook the squsah by your favorite method 2. Remove seeds, scrape off the strands of the squash and place in colander to drain off any moisture and cool completely 3. When room temp, combine with the eggs, celery, onions, and parsley 4. Add mayo to bind 5. Season to taste, I like the salt free Spike herb seasoning 6. Use to make wraps or chill till serving time 7. Spread on wraps with lettuce, thin sliced tomatoes, or whatever you like 8. Serve immediately |
