Spaghetti squash used in the cheesy dip that combines grated Parmesan and Monterey Jack cheese and a bit of mayo. Ingredients:
1 spaghetti squash, halved and seeded. |
1/4 cup butter |
1/2 cup mayonnaise |
1 cup grated parmesan cheese |
2 cups grated monterey jack cheese |
3 tablespoons grated parmeasan cheesd for topping |
Directions:
1. Slice squash in half and remove seeds 2. Place squash sliced side down in a baking dish and add 1/2 cup water. 3. Place squash in the microwave and cook for 10 minutes. 4. Scoop out the cooked squash and place in a mixing bowl. 5. Add butter to the squash and stir until butter melts. 6. Stir in the mayonnaise, 1 cup Parmesan cheese and Monterey Jack cheese into the squash mixture until well blended. 7. Pour into the baking dish, sprinkle with 3 tablespoons Parmesan cheese. 8. Bake in preheated oven at 350 degrees until cheese melts, about 20 minutes |
