Low fat, low carb version of lasagna
Ingredients:
1 squash, spaghetti
15 oz ricotta cheese, nonfat
14 oz spaghetti sauce
2 t. grated parmesan cheese
Directions:
1. Bake squash and scrape out of the shell. Spread a little red sauce in bottom of 8 x 8 casserole.
2. Press in cooked spaghetti squash in bottom of casserole.
3. Spread a little more red sauce over squash.
4. Spread the ricotta cheese over the squash
5. Top with more red sauce.
6. Sprinkle with parmesan cheese.
7. Bake at 350 degrees for 45 minutes or until hot and bubbly.
8. 1/2 cup equals about 70 calories. Very cheesy and very satisfying!
