A little of this and a little of that makes for an easy supper with lots of flavor Ingredients:
8 oz. spaghetti |
1/2 lb. hamburg or 2 italian sausage, casing removed |
1 small onion, chopped |
1 box(10 oz.) frozen chopped spinach, thawed |
2 large eggs, beaten |
1 jar spaghetti sauce, divided |
1 cup grated parmesan cheese, divided |
1/2 cup ricotta cheese (i have used cottage cheese in a pinch) |
1/4 tsp. nutmeg |
Directions:
1. Preheat oven to 350 2. Lightly grease 9 in. square pan 3. Cook spaghetti according to package directions, drain 4. In pan, cook onion until tender and brown meat 5. In large bowl, mix together eggs, spaghetti, 1/2 cup spaghetti sauce, meat mixture, and 3/4 cup Parmesan cheese 6. Pour into baking pan 7. Squeeze excess water out of spinach 8. In bowl, mix spinach, cheese, and nutmeg 9. Spoon over spaghetti mixture 10. Spread with remaining spaghetti sauce 11. Bake for 30 minutes 12. Sprinkle with remaining Parmesan cheese and bake 5 more minutes 13. Let stand 5 minutes before serving |
