Spaghetti Sauce With Meat |

Since my Mother's passing, my sisters and I each claim to have the best. I'll tell you a secret.....mine is the best! Ingredients:
2 lbs lean ground beef |
2 1/2 tablespoons olive oil |
1 1/3 cups yellow onions, chopped |
1 cup bell pepper, chopped |
4 teaspoons garlic, minced |
1 1/2 carrots, grated |
3/4 cup celery, chopped |
102 ounces crushed tomatoes |
2 1/2 tablespoons oregano |
1 1/2 tablespoons parsley |
2 1/2 teaspoons thyme |
2 1/2 teaspoons basil |
1 1/4 teaspoons rosemary |
1 1/4 teaspoons marjoram |
1/2 teaspoon red pepper flakes |
1 1/4 teaspoons salt |
1 1/4 teaspoons fresh ground pepper |
3 bay leaves |
1/2 teaspoon nutmeg |
Directions:
1. Heat a large pot. Add olive oil, yellow onions, bell pepper, garlic and celery. Sauté until onions and celery are translucent. 2. In a skillet, cook the ground beef. Pour off any fat or water. Add to large pot. 3. Add tomatoes. Then add and stir in all spices and grated carrots. Bring to bubbling. 4. Reduce to simmer. Simmer, covered, for at least 4 hours. 6-8 hours is better, the flavors develop further. Check a few times, stir and recover. 5. Freezes well. |
