I needed a small amount of sauce to top a left over lasagna. I checked it out here. Wanted quick, easy, simple, and on-hand ingredients. Oh so many to choose from. Finding something similiar to what I had on hand for ingredients-chili ingredients; OOPS, my wife doesn't like spice! LOL. Long story short, this is very similiar to many others on here but MY WIFE LOVED THE SAUCE. Who knew? I think this is the first new foodie item I've made that she likes.
Ingredients:
1 medium onion, sliced
2 tablespoons virgin olive oil
1 teaspoon garlic, instant minced
4 cups sun-dried tomatoes, rehydrated
8 cups s.d.t. tomato sauce
2 tablespoons sugar
1 teaspoon dry basil
1 teaspoon dry oregano
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
3/4 lb fresh pork sausage
Directions:
1. Saute sliced onions in olive oil; add minced garlic to onions and soften lightly.
2. Remove onions when browned.
3. Run stewed and diced tomatoes through blender for desired consistency.
4. Add tomato sauce, sugar, parsley, basil, oregano, garlic powder, salt, and black pepper to a heavy bottom pot and bring to a strong simmer.
5. Lower temperature to have a 12 bubble simmer (10 to 14 bubbles) uncovered for 45 minutes.
