I love Spaetzle. I got this recipe from the Frugal Gourmet's On our Immigrant Ancestors cookbook. Read more . You can serve Spaetzle with gravy over top it or stir in some butter and parmesan cheese and that's awfully yummy too. I purchased a Spaetzle maker which makes the job so much easier. It is not hard to make, but it is very messy. Soak your pans afterwards or it will dry like glue.
Ingredients:
2 eggs
2 tbsp. vegetable oil
1/2 cup water
1/2 cup milk
2 1/2 cups all-purpose flour
1/2 tsp. salt
1/4 tsp. baking powder
Directions:
1. Using an electric mixer, blend the eggs, oil, water and milk. Stir the flour together with the salt and the baking powder in a dry bowl. Blend this mixture into the liquid. Mix well and set aside for a moment.
2. Bring 4 quarts of salted water to a boil. Using a Spaetzle maker, use about 1/3 of the dough and drop it into the top of the Spaetzle maker. Slide Spaetzle maker back and forth over the gently boiling water until dough drops in. When 'dumplings/spaetzle' float to the top of the surface, they are cooked. Finish all of your dough through the Spaetzle maker. Remove the dumplings from the saucepan with a slotted spoon and place in Casserole dish. They can be served this way with Gravy or with butter and parmesan cheese mixed in. Yum!
