Spaetzle, this recipe is so light and airy. Spaetzles are made either cutting dough off a cutting board, dropping spoonfuls into boiling water or soup, Or they sell graters and spaetzle makers. I have done all the ways. Read more . Depends on time and how your in the mood for them. Dropping off the teaspoon makes them little bigger, cutting off the board depend on thickness. They sell a grater for spaetzles and it is medium size dumplings, I have a press that makes super thin spaetzles. My entire family loves these. My mom is german. This is different how she makes hers. She does not use a recipe. I often don't. But I have been using this one. I love spaetzles with porketta is how i use it alot. Or saurbraten. Anyway is delicious, with or without juice/gravy.
Ingredients:
2 1/2 cups flour
1/4 teaspoon salt
2 eggs
1/2 cup milk
1/2 cup water
Directions:
1. Beat eggs lightly.
2. Add milk and water.
3. Place flour and salt into a bowl.
4. Gradually add egg mixture. I make a well in the flour and mix it in.
5. Grate dough over boiling salt water. Or
6. Press through a colander or press into salted boiling water. OR
7. Drop by teaspoonfuls into boiling salt water or soup. Or
8. Cut dough off the cutting board directly into boiling water or soup.
9. Cook and strain. Cooks for about 6 minutes.
10. I cook it all until I use all the dough.
11. Be sure you have a good size pot of water with salt.
12. Spaetzle can be eaten anyway. Including tomato sauce and melted cheese, or just with melted cheese on top or cheese sauce. These are not traditional for those Germans like my mom,lol but these are great anyway! Like a lite tiny pasta.
13. Serve this with anything. You can add herbs to batter.
14. We even eat this with butter and jelly.
