16 oz. soybeans |
2 lbs small red potatoes, cooked and quartered |
3 tablespoons olive oil |
2 tablespoons balsamic vinegar (or apple cider) |
1 tablespoon dijon mustard |
1 tablespoon splenda brown sugar blend |
1/2 teaspoon black pepper |
1 clove garlic, minced |
1/2 red onion, chopped |
Directions:
1. Cook potatoes and add soybeans to boiling water in the last 2-3 minutes 2. Whisk next 7 ingredients together 3. Combine all, chill overnight |
