This is an easy and yummy Japanese style pickle. From Bento Boxes by Naomi Kijima. Ingredients:
1 small carrot (about 2 inch piece) |
1 tablespoon soy sauce |
Directions:
1. Cut carrot piece in half lengthwise. Score the round part by making lots of shallow cuts. 2. Place carrot in shallow dish with soy sauce and let sit for 30 minutes, flipping once halfway through. 3. Cut carrot into chunks before serving. |
