Ingredients:
4 (4-ounce) tuna steaks (1 inch thick)
1/2 cup lime juice
1/4 cup low-sodium soy sauce
1 teaspoon peeled, minced gingerroot
1/2 teaspoon dried crushed red pepper
vegetable cooking spray
Directions:
1. Place fish in a shallow baking dish. Combine lime juice and next 3 ingredients, stirring well. Pour lime juice mixture over fish. Cover and marinate in refrigerator 30 minutes, turning fish once.
2. Remove fish from marinade; reserve marinade. Place marinade in a small saucepan; bring to a boil, and set aside.
3. Coat grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Place fish on rack; grill, covered, 4 to 5 minutes on each side or until fish flakes easily when tested with a fork, basting often with reserved marinade.
