Soy Glazed Salmon With Noodles |

This is a recipe I copied out of the current (May 2010) issue of Real Simple magazine. I'm altering it a bit here to reflect my family's preferences. The original recipe calls for 16 oz noodles, 24 oz salmon, and 1 clove garlic. When I serve this I will likely mix the glaze into the noodles instead of dividing it amongst plates. Ingredients:
8 ounces green beans, cut |
8 ounces soba noodles |
1/2 cup reduced sodium soy sauce |
3 tablespoons reduced sodium soy sauce |
2 garlic cloves |
1 tablespoon ginger, minced |
2 tablespoons ginger, sliced thin |
2 tablespoons white wine (or rice wine or sherry) |
16 ounces salmon fillets |
3 scallions, cut |
1/4 cup rice vinegar |
2 tablespoons lemon juice |
1 tablespoon sugar |
Directions:
1. Heat oven to 400. 2. In a large pot boil the green beans for two minutes then transfer from pot with slotted spoon. 3. Add noodles to boiling water and cook according to package directions. 4. Combine 3 T soy sauce, garlic, minced ginger, and 1 T cooking wine. Add the salmon to this mixture and turn to coat. 5. Scatter scallions and sliced ginger on top of salmon and bake 20 minutes. 6. In a small pot combine vinegar, lemon juice, sugar, remaining soy sauce, and wine, stirring until the sugar dissolves. Bring to a boil and reduce by 1/2 (about 3 minutes). 7. Divide the noodles and salmon onto 4 plates and drizzle with the glaze. |
