Soy-free Chicken Fried Rice |

I never have soy sauce in the house!!! So this is how I make chicken fried rice. The veggies can be changed to your taste, and it is a great vegetarian dish as well without the chicken. Ingredients:
2 chicken breasts |
4 cups brown minute rice |
4 cups chicken broth |
2 teaspoons butter |
1 carrot |
1 celery stalk |
1/2 white onion |
1/4 red pepper |
1/4 yellow pepper |
1/4 green pepper |
1 can mini corn cobs |
1 egg |
1 tablespoon cooking oil |
salt, pepper, dry parsley, dry chicken broth seasoning |
Directions:
1. Combine minute rice, chicken broth and butter in microwavable dish. Cover and cook on high power 18 minutes. Let stand, then fluff with a fork. 2. Cut all veggies and chicken into tiny pieces. 3. heat oil in a pan. Add chicken. Saute while seasoning with salt, pepper, and dry chicken broth seasoning. Remove cooked chicken from the pan 4. Cook the egg in the same pan. Seperate it into small pieces. Then add veggies. Season again, and add the chicken. 5. Throw in the rice. Cook until hot and enjoy!!! |
