Southwestern Turkey Meatloaf |

People love this meatloaf, especially when I don't tell them it's turkey! From Bottom Line magazine, of all places. Ingredients:
4 slices wheat bread |
1/2 cup onion |
1/2 cup red bell pepper |
1/2 cup packed fresh cilantro |
6 garlic cloves, minced |
1/2 cup sour cream |
1-1/2 tablespoon worcestershire |
1/2 cup + 6 tablespoons bottled chili sauce |
2 tsp cumin |
1-1/2 lbs. ground turkey |
1 egg, lightly beaten |
1/4 tsp salt |
dash black pepper |
Directions:
1. Heat oven to 375. 2. Tear bread into crumbs or use food processor. 3. Combine onion, bell pepper, cilantro, and garlic. 4. Stir in 1/2 cup chili sauce. 5. Add the breadcrumbs and all remaining ingredients. 6. Mix very well with your hands. 7. Lightly spray a loaf pan. Press meat mixture into pan and flatten the top. Spread remaining chil sauce over the top (do not add more than recipe calls for - it overpowers everything else). 8. Bake for 70-75 minutes. 9. Allow meatloaf to stand for 20 minutes before serving. |
