Southwestern Style Stuffed Green Peppers |

This is an easy side dish for grilled chicken or steak. it has a sweet flavor, thanks to the chipotle sauce. Ingredients:
2 green bell peppers |
1 pkg uncle ben's sante fe style microwaveable rice |
olive oil |
4 tb hot squeeze (tm) sweet heat chipotle sauce (thehotsqueeze.com) |
Directions:
1. Top two green peppers and remove the ribs and seeds. 2. Brush each pepper, inside and out, with olive oil. 3. Stuff each with 1/2 packet of Uncle Ben's microwavable rice. 4. Add 2 tablespoons of Sweet Heat Chipotle Sauce to the rice in each bell pepper. 5. Wrap in aluminum foil. 6. Cook in a covered grill for 15 minutes. 7. Goes good as a side to grilled steak or chicken. Especially good with grilled corn on the cob. |
