Southwestern Steak Corn and Black Bean Wraps |

This is from Cooking Light magazine. This looks like a great way to use up leftover steak! Ingredients:
1 cup corn |
1/2 cup fresh cilantro, chopped |
2 tablespoons red onions, minced |
2 tablespoons lime juice |
1 tablespoon olive oil |
1/2 teaspoon ground cumin |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1 (15 ounce) can black beans, drained and rinsed |
2 1/4 cups flank steaks, grilled |
6 (8 inch) flour tortillas |
3/4 cup monterey jack pepper cheese |
Directions:
1. Combine the first 9 ingredients, stirring well to coat. 2. Arrange about 1/3 cup of the steak down the center of each tortilla. 3. Top each with about 1/3 cup of corn mixture and 2 tablespoons of cheese; roll up. 4. Wrap in aluminumm foil or waxed paper and chill until ready to eat. |
