Ingredients:
2/3 cup mayonnaise |
1/2 (8-oz.) package cream cheese, softened |
1/2 cup fresh cilantro leaves |
2 tablespoons sliced green onions |
1 teaspoon grated lime rind |
2 tablespoons fresh lime juice |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
1 jalapeƱo pepper, seeded and chopped |
1 (10-oz.) package frozen chopped spinach, thawed and squeezed dry |
Directions:
1. Combine first 9 ingredients in a food processor; process until smooth. Add spinach, and pulse 3 times or until blended. Transfer dip to a bowl; cover and refrigerate up to 1 day. Serve with fresh cut vegetables, multigrain tortilla chips, or crackers. |
