Southwestern Soup With Choice of Garnishes |

A flexible soup with a choice of veggies, seafood, meat, and other toppings of your choice. Ingredients:
2 (14 ounce) cans beef broth |
1/2 cup sliced carrot |
1/2 cup diced onion |
1 cup diced potato |
1 garlic clove, minced |
1 (8 ounce) can crushed tomatoes |
1 tablespoon worcestershire sauce |
salsa, to taste |
shredded cheese |
diced avocado |
diced green pepper |
diced cucumber |
2 ounces ripe olives |
1 (6 ounce) can fresh mushrooms, sliced and sauteed in butter |
1 (6 ounce) can baby shrimp, cooked and peeled |
1 cup cooked ham, diced |
1 cup onion, sliced |
3 hard-boiled eggs, chopped |
1 cup diced tomato |
sour cream |
Directions:
1. Combine broth, carrots, onions, potatoes, garlic, tomatoes, and worcestershire sauce in a slow cooker. 2. Cook on low 6-8 hours. 3. Before serving, stir in salsa, sampling as you go to get the right balance of flavors. 4. Serve the soup in bowls, and top with your choice of garnishes. |
