Light, flavorful, and filling. Ingredients:
1 (7 ounce) box spanish rice mix |
0.5 (16 ounce) bag frozen corn |
1/2 red bell pepper, diced |
1/2 green bell pepper, diced |
4 roma tomatoes, diced |
1/2 small red onion, diced |
1/4 cup cilantro, chopped |
1 (15 ounce) can black beans |
Directions:
1. Prepare rice mix as directed on package. 2. Add frozen corn while rice simmers. 3. Dice red bell pepper, green bell pepper, tomatoes, and onion. 4. Chop cilantro. 5. Rinse black beans in cold water. 6. Combine all ingredients. Can be served warm or cold. |
