Delicious meatless recipe. Ingredients:
1 2/3 cups rice |
3 1/3 cups water |
1 large onion, chopped |
1 green pepper, chopped |
1 red pepper, chopped |
1 tablespoon olive oil |
1 (15 ounce) garbanzo beans (rinsed and drained) or 1 (15 ounce) chickpeas (rinsed and drained) |
2 cups shredded cheddar cheese |
1 cup ricotta cheese |
1/4 cup sour cream |
1 1/2 teaspoons chili powder |
1 cup salsa |
Directions:
1. Cook rice in water til tender. Saute next 4 ingredients til tender. Add rice to beans. In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa. Spoon 1/2 of rice mixture in a greased 9x13 pan. Layer with cheese and salsa mixture. Repeat layers. Bake uncovered at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake 5 more minutes. |
