Southwestern Rice Dish

Delicious meatless recipe.
Ingredients:
1 2/3 cups rice
3 1/3 cups water
1 large onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 tablespoon olive oil
1 (15 ounce) garbanzo beans (rinsed and drained) or 1 (15 ounce) chickpeas (rinsed and drained)
2 cups shredded cheddar cheese
1 cup ricotta cheese
1/4 cup sour cream
1 1/2 teaspoons chili powder
1 cup salsa
Directions:
1. Cook rice in water til tender. Saute next 4 ingredients til tender. Add rice to beans. In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa. Spoon 1/2 of rice mixture in a greased 9x13 pan. Layer with cheese and salsa mixture. Repeat layers. Bake uncovered at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
