Ingredients:
2 cups fat-free, less-sodium chicken broth |
1 cup uncooked long-grain rice |
1 1/4 teaspoons ground cumin |
1/4 cup thinly sliced green onions |
Directions:
1. Bring broth to a boil in a large saucepan; add rice and cumin. Return to a boil; cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed. 2. Add green onions; toss gently. 3. Tip: Serve this spiced rice dish with Chicken Enchiladas. |
