Southwestern Quinoa Salad |

A bit spicy and packed with protein. Sometimes I add grilled chicken to make it a meal. Ingredients:
1 cup quinoa, uncooked |
2 cups water |
1/3 cup chopped tomato |
1/2 cup chopped celery |
1/2 cup frozen corn, defrosted |
1/2 cup canned black beans, rinsed and drained |
1/2 cup red onion, thinly sliced |
1/2 cup seedless cucumber, diced |
1 chipotle chile in adobo |
2 tablespoons light sour cream |
2 tablespoons fresh lime juice |
2 teaspoons chili powder |
2 teaspoons cumin |
3/4 cup fresh cilantro leaves |
1/4 teaspoon salt |
Directions:
1. Cook quinoa according to package directions. 2. Spread on a baking sheet to cool. 3. Mix cooled quinoa with vegetables and beans. 4. Blend dressing ingredients in blender until smooth. 5. Mix dressing with quinoa. 6. Chill and serve. |
