A good side when grilling or enjoying a good bbq. Ingredients:
16 oz pasta (spirals work best) |
1 green bell pepper |
1 can of corn |
2 minced garlic cloves |
1 small can sliced black olives |
1 can of kidney beans (washed and strained) |
1 diced avacado |
1 lemon or lime (juicies work just as well) |
16 oz salsa (you determine how spicy this gets) |
1/2 cup of sour cream |
3/4 tsp cumin |
1/2 tsp salt |
Directions:
1. Boil Pasta 2. Dice avacado and cover in lemon/lime juice to prevent browning in a side bowl. 3. In a large bowl mix the pasta, cut bell pepper, and other ingredients. 4. Add avacado and remaining lemon/lime juice for added kick. 5. Serve cold and enjoy! |
