Southwestern Lentil Salad |

A good marinated lentil salad.. Has a different twist Ingredients:
2 cans black beans, rinsed and drained (15 ounces each) |
3 cups cooked lentils |
1 1/2 cups fresh or frozen corn |
1 cup red onion, chopped |
1 cup green pepper, chopped |
1/4 to 1/2 cup minced fresh cilantro (you can use parsley if you want) |
1 cup vegetable oil |
1/2 cup cider vinegar |
1 tablespoon dijon mustard |
1 1/2 teaspoons ground cumin |
1 to 2 garlic cloves, minced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. In a large bowl, combine the first 6 ingredients. 2. In a jar with a tight fitting lid, combine the remaining ingredients and shake well. 3. Pour over vegetables and toss. 4. Cover and refrigerate for at least 2 hours. |
