This is a great recipe for the holiday coming up...goes good with bbq, fried fish...or any Tex-Mex combination..
Ingredients:
1/2 cup sour cream
1 teaspoon sugar
1/2 cup olive oil
1/2 cup lime juice
1/3 cup fresh chopped cilantro
salt and pepper to taste
4 cups of any type of lettuce or greens
1 small bell pepper, chopped
5 plums tomatoes, chopped
1 can black beans rinsed and drained (15 oz)
1 small purple onion chopped
1 small package of 4 cheese blend mexican cheese (8oz)
1 can mexicorn whole kernel corn, drained
1 can sliced ripe olives, drained (6oz)
1 to 2 avocados, peeled and sliced
2 cups crushed tortilla chips
Directions:
1. Add the first 6 ingredients to the container of an electric blender.; process until smooth.
2. Layer the lettuce in a 3 qt glass bowl, followed by the rest of the ingredients and topped with the tortilla chips and avocados last.
3. Pour dressing over salad just before ready to serve.
4. Toss gently and serve.
