Low-fat, cheesy, and colorful... how can you beat that. Ingredients:
1 cup chopped onion |
2 garlic cloves, minced |
2 cans yellow hominy, drained |
2 cups chopped tomatoes |
1 (4 oz) can green chilies, chopped |
1 tsp chili powder |
1/2 tsp cumin |
1/4 tsp pepper |
1/2 cup shredded cheddar cheese (reduced fat) |
Directions:
1. 1. Spray a large skillet with cooking spray and saute onion and garlic until tender. 2. 2. Add the hominy, tomatoes, chilies, chili powder, cumin, and pepper. Mix gently. 3. 3. Transfer to a 2 quart baking dish coated with cooking spray. 4. 4.Bake at 350 degrees, uncovered, for 25 minutes. Sprinkle with cheese and bake another 5 minutes or until cheese is melted. |
