Southwestern Ham and Cheddar Chowder |

If ham chowders are usually too sweet for you, give this one a shot. I suggest using plenty of hot sauce for a really nice kick. Ingredients:
3/4 cup onion, diced |
3/4 cup celery, diced |
4 jalapeno peppers, seeded and diced |
4 ounces butter |
1/4 cup flour |
2 quarts chicken broth |
1 lb cheddar cheese, grated |
1 cup heavy cream |
1 tablespoon worcestershire sauce |
1 tablespoon dry mustard |
1/2 cup beer, preferrably dark (drink whatever's leftover) |
1 1/2 ounces parmesan cheese, grated |
8 ounces ham, cooked and diced |
3/4 cup scallion, finely chopped |
salt and pepper, to taste |
hot sauce, to taste (such as tabasco) |
Directions:
1. Saute onion, celery, and jalapenos in butter until tender. Add the flour slowly and stir frequently for about 5-6 minutes. Add the chicken broth and simmer for about 25 minutes. 2. Remove from the heat and stir in the Cheddar cheese, just a little at a time, until smooth. Add the cream, Worcestershire sauce, dry mustard, beer, and Parmesan cheese. Stir until well blended, then add the ham and scallions. Season with salt, pepper, and hot sauce. |
